The pruning of the vines is the first operation of the process that will finish with the harvest. It is the most important operation that affect on the quantity and also the quality of the grapes.
The countryside starts to get crowded. The Olive Harvest starts and, like every year, the pickers begin their work, everyone in the field that have to manage. The harvest is manual and it is the first step in order to have a high quality product.
The Harvest 2013 has started on the 9th of September, with the white grapes, and it is finished on the 16th of October with Sangiovese. The grapes have reached the ripeness two weeks late.
